Falafel and salad nourish bowl (GF)
If youβre in need of a super quick and healthy salad that you can make for lunch, this recipe is for you! Letβs be honest, there is no real cooking involved and all you need to do is prepare and combine the ingredients. If youβd prefer, you can make your own falafels but itβs also ok to buy them pre-prepared like I did.
Ingredients
2 cups baby spinach
4 β 6 falafels (I used the sweet potato falafels from Yumiβs)
2 tablespoons lactose free feta
ΒΌ cup diced cucumber
ΒΌ cup diced tomatoes
1 tablespoon diced red onion
ΒΌ cup pitted black olives
2 tablespoons hummus
Method
Prepare the falafels.
In a bowl, add the baby spinach followed by the falafels, feta, cucumber, tomatoes, red onion, black olives and top with hummus.
