Ingredients
ΒΌ cup roast chicken breast
ΒΌ cup roast sweet potato
ΒΌ cup fresh beetroot
ΒΌ baby spinach
ΒΌ avocado, sliced
2 tablespoons hummus
Β½ cup rice and quinoa, cooked
Method
In a bowl, place the rice and quinoa followed by the rest of the ingredients.
Top with hummus.
